Chapel Hill was founded in 1973 in McLaren Vale, South Australia, and takes its name from the bluestone chapel built in 1865 that today serves as the cellar door. The Parson Shiraz represents the estates most approachable style, drawing on both estate and grower vineyards across McLaren Vale to capture the regions plush fruit character. The 2021 season was warm and dry, producing ripe, concentrated fruit with balanced acidity. Grapes were picked from diverse sites, fermented in small parcels, and matured in seasoned French and American oak hogsheads to add gentle spice and structure without dominating the fruit. Bottled in magnum format, the wine shows blackberry and plum richness with hints of chocolate and regional spice, carried by supple tannins and a generous finish. It is crafted for early enjoyment yet offers the capacity to develop further complexity with short to medium term cellaring.
